ArtisanalArtisanal Fromagerie, Bistro and Wine Bar showcases the formidable creativity and passion of Chef-Proprietor Terrance Brennan who adds playful twists to classic French bistro dishes. Brennan’s Osso Bucco, for example, features monkfish instead of meat. Traditionally prepared with beef, Brennan’s Duck Bourguignon is artfully made a La Grand-Mère with Chestnut Pappardelle. Selecting only premium ingredients, Brennan’s commitment to the use of artisanal, sustainable and organic products is evident in the quality of each dish. Recalling a Parisian bistro, Artisanal's handsome interior was designed by noted architect Adam Tihany. A mural-sized painting, which had hung in French restaurants since the 1930's, presides over the 160-seat Art-Deco space. In the back of the dining room is the cheese cave, a temperature and humidity controlled room, where a number of the world's finest artisanally-made cheeses are aged to optimum ripeness and peak flavor. Adjacent to the dining room is the wine bar, which boasts 160 wines by the glass. After its March 2001 opening, Gourmet magazine wrote, “as cheese-intensive as Artisanal is, as profoundly as it caters to the basest of lactic desires, the restaurant may already be one of the best bistros in New York, remarkable even without the cheese.” Awarded Best Brasserie Cuisine in the 2002 Zagat Survey, Artisanal continues to delight customers and critics alike.
Bar ArtisanalBar Artisanal represents Chef-Proprietor Terrance Brennan’s first venture downtown. The TriBeCa bistro and bar is a dressed down version of the acclaimed Artisanal Fromagerie, Bistro & Wine Bar, and maintains the same commitment to the use of artisanal, sustainable and organic products. Bar Artisanal features inventive cocktails created to pair well with cheese; an accessible wine list; and sumptuous dishes that are priced $20 and under. Black and white tile floors, wrought-iron latticework and swirling ceiling fans evoke the fun, festive ambience of a French bistro/bar. Designed by Albert Angel & Elle Kunnos, the spacious restaurant is enhanced by the floor-to-ceiling, multi-pane windows and the birdcage chandeliers that shimmer as the space transitions from day to night. The piece de resistance of Bar Artisanal is the Bar du Fromage et Charcuterie that will serve a selection of artisanal cheeses and charcuterie. A communal table in the bar will encourage impromptu dining, while a wood-fired oven will turn out creative Pissaladieres (French-style pizzas) including one with Sheep’s Milk Ricotta, Fava Bean Pesto and Speck.
Artisanal BrasserieArtisanal Brasserie & Winebar introduces Chef Terrance Brennan’s acclaimed, creative fare and the joie de vivre of the Artisanal world to Pacific Northwest diners. Located in the exclusive Shops at The Bravern, the Bellevue restaurant will continue Artisanal’s tradition of modern, French brasserie cuisine and the world’s finest hand-crafted cheeses. The distinctive flavors of the Mediterranean, unique cheese and wine pairings, and outstanding hospitality will enchant each guest who steps into the bustling brasserie. The menu will feature Chef Brennan’s inspired and innovative twists on classic French dishes using the highest quality Pacific Northwest ingredients, including lush fruits, vibrant produce, and pristine seafood produced by this extraordinary region. Chef Brennan is committed to using artisanal, organic and sustainable products at Artisanal Brasserie & Winebar, and will continue to support local farmers and artisanal purveyors. These premium ingredients are featured in signature dishes like the sweet and savory Sautéed Skate Wing with Blood Orange Grenobloise & Cauliflower; the hearty and rich Duck Bourguignon a la Grand-Mère & Chestnut Pappardelle; and the Almond Croissant French Toast with Apricot Compote and Ricotta. New signature dishes include Penn Cove Mussels with a choice of preparations; Grilled Sturgeon with Boulangere Potatoes and Mustard Beurre Rouge; and Black Cod with Potato, Chorizo and Manilla Clams. Favorites on the dessert menu include the Artisanal Cheesecake with Pecan Praline and Caramel Sauce; Chocolate Fondue with Assorted Confections and Fruits; and Fresh Baked Apple Tarte Tatin with Cheddar Cheese Crust and Crème Fraiche.
Hand-crafted cheeses of uncompromised quality and a fine selection of charcuterie are featured at Artisanal Brasserie & Winebar’s Bar du Fromage (inspired by the popular sushi bar), where guests can survey and select cheeses on display and create tastings from their own inspiration. The menu also will feature a selection of Artisanal’s creative fondues, including the classic Artisanal Blend fondue, as well as one with Stilton and Sauternes. Designed by noted architect, Mark Knauer, Artisanal Brasserie & Winebar will transport guests to a spirited and lively Parisian, art nouveau brasserie cloaked in vibrant reds and rich mahogany. Intricate details like the custom millwork and lighting fixtures; elegant, handmade wine cabinets; and nickel accents and trim throughout the space create a dynamic setting for the dining experience. The restaurant seats approximately 300 people, and gives diners several options depending on the guests’ preference – a bright and sunny outdoor terrace; a warm and inviting bar; and the main Great Room.
The Artisanal TableChef Terrance Brennan’s The Artisanal Table Pizzeria Enoteca offers guests bold, flavorful Italian cuisine and a wholly unique dining experience - a Mediterranean food bar featuring dishes and ingredients prepared with integrity and pride. The menu highlights the rustic flavors of Italy, featuring handcrafted pizzas, assorted antipasti, and artisanal pastas that give guests a wide variety of healthy and exciting dining options, all on the menu for $18 and under. As with all of Chef Brennan’s restaurants, The Artisanal Table features wild, organic, local, sustainable, and artisanal products, and will support local farmers and artisan purveyors. The Mediterranean-inspired menu features Italian cuisine bursting with robust flavors, artfully composed using the finest ingredients. A stone hearth oven turns out sumptuous, Neapolitan-style pizzas like the classic Margherita in addition to signature pies like one topped with Clams, Guanciale, Hot Pepper and Wild Oregano, or the Tartiflette with Potatoes, Lardons and Reblochon. For the more adventurous diner, the Duck pizza with Gizzard, Confit, Foie Gras and Egg sunny side up is certain to entertain the palate. All pizzas are made with imported Italian flour, tomatoes and organic, artisanal products.
The food bar at The Artisanal Table features a stunning display of antipasti and salumi misti with assorted vegetables and seafood, like sweet and sour Caponata, aromatic Penn Cove Mussels, and flavorful Marinated Seafood. Rounding out the menu are hearty artisanal, handmade pastas like Pappardelle with Lamb Neck Bolognese; Squash Ravioli with Brown Butter, Sage and Walnuts; and Artisanal’s signature Macaroni & Cheese. The Artisanal Table offers an accessible wine list with a focus on regional Italian wines served by the glass, quartino and half carafes. The Artisanal Table features a selection of microbreweries with an offering of beers on tap and hand-crafted bottled beers, including our own Artisanal brand. The Artisanal Table’s warm and sophisticated décor and ambience was designed by noted architect, Mark Knauer. The restaurant seats 80 guests, and features a food counter where guests can dine, and at the same time watch chefs deftly prepare their dishes in the open kitchen.
